I found an absolutely wonderful recipe for cookies on the Tomato Soup Cake blog.
2 sticks butter
3/4 cup brown sugar
3/4 cup white sugar
1 teaspoon vanilla
2 eggs
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cup white flour
1 1/4 cup oatmeal
1 1/4 cup coconut
1/2 cup walnuts
1 cup chocolate chips
*preheat oven to 350 degrees
* cut butter into chunks and place in mixer bowl along with sugars and vanilla. Beat to death- like so it's one consistent consistency. Very smooth.
* add eggs and beat until mixture is almost the fluffiness of whipped cream
This is my secret of great cookies- positively ruthless beating.
* mix baking soda, salt, flour and oatmeal together in a separate bowl. add to butter/sugar/egg mixture sloooowwwly. mix thoroughly
*add coconut, mix thoroughly
*add walnuts and chocolate chips, mix less thoroughly
* drop by tablespoonfuls onto parchment covered baking sheet
* bake until done (I have no idea exactly how long I cook these. I wait until they are brown around the edges but still soft in the middle.)
* cool and eat.... or have your mother hide them so you don't consume them all in one sitting and become very very fat.

If you cut the recipe in half (as I normally do since mamma is appalled by the amount of butter used ;) use 1/3 a cup of each sugar.
And don't forget to have your favorite glass full of milk :)
