Sorry

I'm very sorry about the long weekend when I didn't post, but I had a good reason. I had to start school yesterday! :'(
Oh well, I'll post today's recipe anyway

Double Chocolate Frozen Fudge Pops


Ingredients

  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons cocoa powder
  • 2 1/2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1/4 cup miniature semisweet chocolate chips (optional)

Directions

  1. Combine the sugar, cornstarch, cocoa powder, and milk in a small saucepan over medium heat. Bring to a simmer, being careful not to scorch the bottom of the pan, and stir until thick, about 2 minutes. Remove from heat; stir in vanilla and butter. Transfer to a heatproof bowl, and refrigerate until cool, approximately 20 minutes.
  2. Stir the chocolate chips into the cooled chocolate mixture. Pour into molds and freeze until firm, about 4 hours.


The one thing about this recipe that you have to be careful of is NOT scorching the bottom of the pan.
